Directions
Brine
|

|
Combine all ingredients in a large non-reactive pot. Place fresh ham in the pot, keeping submerged. Keep at 45°F for 4-5 days, turning once.

Rub
|

|
Place all ingredients in a grinder. Grind to a fine powder.

Rub the ham all over with the rub.

|
Bake in a 350°F oven loosely covered with aluminium foil. Cook until internal temperature is 170°F. Remove from heat and let rest.

Make a ham gravy from the pan drippings. Enjoy!
